We will be an organic breakfast/lunch/dinner restaurant in the heart of downtown Portsmouth the most popular and fastest growing city in New Hampshire, the second-best rated state in the USA. We will have wood floor and wall most likely with beer and wine options as well as an organic fresh and cold-pressed juice bar with table service as well as counter service. We will offer organic pasture-raised chicken, beef, fish, and egg options, but they will mostly be added on to dishes not built in. We will have fresh and cold-pressed juice, detox and weight loss plans etc. that can be picked up or delivered. All within our cozy wood-floored and wood-walled 1500 square foot store. We will have pre-prepared food daily sitting on 6 inches of ice (stainless steel ice pan below) each on a unique artisan plate all out in the open air behind glass so that people can choose what to eat from the counter service for grab-and-go. This display is to maximize how fresh the food appears. Then we will also have enough tables to sit about 30-40 although with capacity to sit 50. We want this cafe, restaurant and juice bar to capture everyone from the grab and go health-conscious lunch crowd to the sit-down dressed-up dinner crowd who would like some nice wine with a tasty dinner which may include pasture-raised chicken or beef or wild-caught salmon. We expect the restaurant will appeal to both the young and older generations whether or not they are health-conscious. We will be all organic however as we believe this is best for the consumer and the planet. We just chose to change our name from Port Organic to Fresh House because we were worried that the word organic would scare away customers who might think that organic is pricey or tastes bland. We also noticed the surrounding supermarkets weren't selling a lot of organic produce. So we would like a logo with mainstream appeal that conveys at least some of what we stand for pure, clean, fresh, organic, local, rich, bold, and diverse tasty food and drink. We will not carry any individual culture's type of food but rather an eclectic mix of the best tasting recipes that are healthy that we can find. Let me know if you have any questions. We want to appeal to mainstream eaters at the same time as the vegan organic very health-conscious crowd here in the most popular town called Portsmouth in the second most highly rated state for overall quality of life New Hampshire.
