Microgreens are nutrient dense, leafy plants that people eat raw on salads, smoothies, and sprinkled on main dishes. Chefs also use them at high end restaurants for garnish. Basically you take a seed, grow it to about 4-6 inches, then cut it and eat it. It's like eating your vegetables but microgreens have up to 40 times the nutrient value and antioxidants compared to the adult plant of the same type.
